Know My Story
Hey, I’m Lewis. Cardiff born and bred, where my earliest memories smell like cinnamon and fresh bread. My love for cooking didn’t start in some fancy culinary school. It began before sunrise in my dad’s bakery. I must’ve been about six when my dad handed me my first apron — far too big, dragging at my knees. I’d shuffle in every morning, still half-asleep, and plop myself on an upturned crate beside the counter. While most kids were watching cartoons, I was mesmerised by the way my dad worked the dough — strong hands moving with calm precision, shaping loaves like it was second nature.
He let me sprinkle flour (which often went all over the floor), crack eggs with all the finesse of a wrecking ball, and once, very proudly, burn an entire tray of scones because I forgot to set the timer. But he never made me feel small for trying. That kitchen became my playground, my classroom, and my safe place all in one.
As I grew older, I wanted to do more than bake. I wanted to explore the “why” behind flavours. That curiosity took me to Bordeaux, where I learned to balance subtlety and technique, and from there, I zigzagged across Europe — tasting, experimenting, and working in kitchens that taught me as much about people as they did about food.
This space I’ve built here is a little like that bakery — warm, honest, and always open early. If you’re someone who believes food is a kind of passport — that a dish can transport you somewhere new — then you’re in the right place.
